Quick and easy snack tray for the Fourth of July:
Swiss Cheese Sharp Cheddar Cheese Soft Spreadable Cheddar Cheese Soft Spreadable Neufchatel Cheese Assorted Fresh Fruit (grapes, apple slices, pear slices, melon slices, pineapple slices) Assorted crackers
-Cut the Swiss cheese into cubes. -Slice the Cheddar cheese into diagonal wedges. -Use spreadable cheese on variety of crackers. -Arrange ingredients on serving tray.

More Bitter, More Better
Be honest. Do you eat your veggies? If not, this information may change your mind. Researchers have discovered certain vegetables including: brussel sprouts, broccoli, kale and cabbage, contain chemicals that may prevent cancer. These chemicals also contain sulfur, which explains the distinct taste in some veggies that not everyone loves. But even if you don't like veggies, you'll like their benefits.
"There is no question that if people eat more of these Brosica plants: cabbage, brussel sprouts, they will get less cancers of the colon, of the breast and of the lung and other tissues."

Your body can absorb toxins from pollution, smoke and even other foods. The plant chemicals help your body neutralize these substances. Some of the chemicals in these vegetables also help improve your immune system.
Keep in mind these beneficial chemicals are water-soluble. So to get the full benefit, proper preparation is key. Steaming, baking and microwaving are fine as long as the vegetables aren't over-done. But watch out for over-boiling: you leech out all the good stuff.
Montery Chicken topped with Mushrooms:
I know the focus is on Beef this month but I just had to give you this one on Chicken!
Cook several boneless and skinned chicken breasts in the microwave oven.
Wash and slice one 16 ounce package of mushrooms.
Saute' the mushrooms with some sliced onions.
Plate the chicken breasts and top with the sauteed mushrooms and onions.
Decorate with a sprig of Rosemary and serve.
